Hi y'all. Feast your eyes on this!
My HOMEMADE BANANA PUDDING. I love making this dish. My family is addicted to it. Nope I don't use any packaged pre-made pudding or powdery boxed stuff. This is the REAL DEAL.
While hanging out here in Cincinnati (work) for a few weeks, in a hotel with a full kitchen (ahh yes!!!), a sister had to bring some of that Southern home-cooking to the Chili City.
I'll probably share this with the hotel staff and co-workers, 'cause I definitely can't eat all of it; although I would try to put a dent in it. :) (Gotta keep watching the figure, you know!) However, I do enjoy making it and I'll even share my lil' recipe. I'm one of those folks who enjoy experimenting and this is what I came up with. Before I go any further, you can not be fat-conscious (sorry to be so blunt) But you really can't! This is VERY RICH!
Van's Homemade Banana Pudding
2 cans condensed milk
1 can evaporated milk
2 egg yolks
1 half stick butter (real butter)
1 half teaspoon vanilla
5 or 6 bananas
1 box Nilla wafers (use desired amount)
Combine first five ingredients in a sauce pan and cook and stir for approx. 15 - 20 minutes or so or until mixture slightly thickens and has a smooth texture (time may vary depending on type of heating elements). Make sure to stir constantly to prevent sticking. (I prefer to use the double boiler method and if you don't have one, use a homemade version which works perfectly. Fill a stainless skillet halfway with water and set the sauce pan of mixture inside the skillet. This keeps the mixture from over cooking and provides the type of texture you want.) Continue to stir constantly. Mixture should develop into a smooth texture. After mixture is done, peel and slice the bananas. Grab a glass bowl and start the layering process. Start with cookies on bottom, then sliced bananas on top of the cookies. Pour some mixture over the bananas. Then start another layer of cookies, then bananas, then more mixture. Continue this process until you've used all the mixture. Top with cookies. Put in refrigerator to chill for a few hours, then ENJOY!

Wow - it has been a long time since I've had that kind of banana pudding. I used to love it. A lady from church used to make it for me. I was the Sunday School teacher for her 11 year old boy who claimed to be super in love with me (I was 16.) He brought me some once and I said I loved it so much. He said if I married him, I could have all I want. LOL Thanks for the memories. Now I'll have to make some and then call him. (we still keep in touch)

Priscilla please do come back and let me know how it turned out. Amazingly, I've been getting lots of email and comments on that recipe, especially during the Thanksgiving holiday. The key to this recipe is making sure it's cooked enough where it has a creamy and smooth texture, but not too much where it appears too thick and dark in color. Some prefer to add a bit more milk to tone down the sweetness. Good luck! Thanks for trying it out. I am no ways a queen at creating recipes, I just write down as I go and if it turns out okay, I use that information. I just love to cook girl! :)

My mother-in-law, who is no lenger with us, used to make the best banana pudding in the world. I learned to cook southern style from her, but I never got the recepipe for her banana pudding.
